A Tamilian 1 yr in US === A Chettinad Cook !!!

Yeah... I have completed my 1 yr stay in this alien place...

Man is very in bad animal kingdom, it never adapts, though it appears to be adaptive.. esp when it comes to food... It travels kms or do anything to have the food which it accustomed over a period of time in its childhood....

How one Indian Guy transforms to good cook:
Initial somedays counted on $$$ and avoided most american foods and try to adjust with available indian food, no taste, even daily curd rice will be suffuce. All it matters is $ $ $ $ ...

But After 3 months ( had good $$$ health ) and will try out varieties of americal food / restaurants... nah!!! It never satisfies, tough its different and looks good... Most of times in American restaurant we cant decode the menu card, and afer repeatitive brute force attack on menu card, we can successfully able to decode some. But sure once the order is served, will end up in awfully bad (either it will be sweet or so sour that we never taught to have as main dish)... Or will be totally opposite that wat we taught when we decode the menu card... But never avoided flooding our food with chilli sauce ( I was told by my friends that "I asked the waitor to serve me "Mirchi Sauce" after couple of round beers".. ah wat a hindi knowledge !!!)

Time comes...the animal inside us never gets satisfies, ofcourse only related to food ( there are so many other thing which will satisfy the animal) ... Our taste buds cant forget the taste at the road side shops and anadhra style and chettinadu restauratns, esp after couple of beers... It finally leads us to cook our own foods...

This how a guy stay abroad for long times turns to be a good cook !!!

Here I put a receipe of one such item, (Standard when ever I toch bottle at home !!!) :
Chicken Biriyani:
1 KG Chicken
5 Tomatoes ( Small pieces)
3 Onions ( Thin Logitudinal sliced)
3 cups biriyani basmati rice100 ml oil

Masala Lists:1.
1 inch Thick GInger
2. 4 Garlic
3. 7-8 Green Mirchis (can be added more if more spice needed)
4. half coconut. ( use 1/5th of frozen shredded cocunut)
5. zeera - small amout6. Cloves - 5
7. Cinnamon (lavanga) - small amount
6. Cardamom - 5
7. Start Anise - 1.5
8. Masala Leaf - 5
9. Corriandar leaves
10. Pudina leaves

Steps:
1. Grind all the masala items , nicely, in mixer ( becomes green color liquid)
2. Add oin in big pan and start frying onion, fry for 15 mins min
3. Add tomato and continue fry for another 10 mins
4. Add the grinded masala to it and mix well for 10 mins
5. Add salt. Then red mirchi powder if more spice required.
5. Add cleaned and washed chicken to it. and mix well. and boin for 10 mins
6. Add water.. ( make sure 1:1.75 ratio ) Since we added some water in masala already.. take care in adding water...
7. Add the rice .. and close the lid.. after sometime briyani will be ready. .. ah smelling yummy !!!8. If hav time, we can fry cleaned raw rice in 3-4 spoons of ghee in a aseperate pan... ( but not mandatory)..

Note: Kudumis can add also follow same receipe and add vegetables instead of chicken.

Definitely this tastes good, atleast after couple of CORONAs !!!

See you soon, with more chettinadu receipes !!!
